Niçoise flavors

The Promenade des Anglais at dusk, the palm trees and rounded roofs of the Negresco Hotel, set against a blue sky, ocher facades and the traditional shutters of Place Garibaldi, pointu boats fishing in the bay, this is Nice, capital of the French Riviera.

Enjoy the sweetness of life, let us discover the traditional “cuisine nicoise”. At the Cours Saleya market, bite into a Pain-Bagnat while exploring the flower stalls, with their seasonal mimosa and lavender. Displays of vegetables, featuring tomatoes, eggplants and peppers perfect for a ratatouille, artichokes for a Barigoule, and zucchini blossoms for fritters and tourtes.

Our quest brings us to the restaurant tables of the side streets of Old Nice or the port, where we can take delight in a pissaladière, a socca, “petits farcis”, the quintessential Provencal stuffed vegetables, sardines, ravioli, or an authentic salade niçoise. Let’s not forget to sample the local olive oil and a glass of Bellet (AOC). Every year, the city hosts the famous Nice Carnival.
